Smoked & shredded a chuckie a few days ago: http://tvwbb.com/showthread.php?66476-Shredded-Chuck-Roast
and could now satisfy my craving for a smoked beef enchilada.
Fired up the performer & got the ingredients together for the beef.
Let everything stew for a bit:
The rest of the ingredients to make of the enchiladas:
Heated the tortillas on a lightly oiled skillet:
Bottom floor of the stack.
Assembled the enchiladas & into the performer, cooked indirect for 15 minutes. Gotta get them nice & warm... melt that cheese.
Fried a couple eggs.
Time to eat!!!!
