Shé~cone Mole Tostadas

although it wasn't as nice a day as Tony enjoyed yesterday... it wasn't too bad here ....

at least, the sun was out and you wanted to think it's warming alittle...
got about ten boneless/skinless chicken thighs out of an overnight marinade to grill-um up

as the sun sets, and the temps drop like a rock....

i removed the thighs,
dropped them in a toss-away foil pan and cover them with a mole sauce.

covered the pan with foil and moved them to the oven.
frees up the grill for a few nopales

a few minutes each side and they're nearly done....

the bird thighs were falling apart nicely in the mole, i helped shred it more.
made up some refried beans, slathered it on some tostadas,
layered the meat with salsa, shredded cheeses and the sliced up nopales.
Served up a mess.

Great looking yardbird mole tostadas, Jim! I could go for a half dozen of those beauties right now!
 
Tostadas de pollo con mole look delicious and the nopales is nice added touch. Nice cook Jim.

Being a newbie here, and you cook like this in the winter, Jim, I can't wait to see the spreads you host when your blood gets up to temp. Makes me hungry.

looks like a little melting going on there, fingers crossed for some decent weather soon Buddy!
 
Jim - My MIL is from Central America and she makes a similar dish - with ground beef, shredded cabbage, tomato based sauce and grated Honduran cheese on a fried tortilla. It's amazing. I won't say anything - but you might be giving her a run for her money here...Looks awesome!
