I smoked my first brisket 2 years ago. Since then I haven't smoked another one mainly because they don't sell whole brisket in my area, as well as price. But last week I was in East Haven CT and saw them at the Walmart Super Center for $2.46/lb so bought a 9 pounder. After trimming it weighed in at 7.5 lbs.
I applied the midnight brisket rub recipe posted in the Midnight Brisket thread. I cooked it fat side up:
Here's my setup outside my garage. I put a small piece of foil around the thin section of the packer to retain moisture:
After 6 hrs @ 250-275F the temp was 175F so I wrapped it in foil:
I pulled it when it hit 205F after 2 more hours on the grill:
And here's how it looked sliced after resting for 3 hours in a cooler:
Sorry for the blurry pics, but you get the picture! No plated pic but the sides were baked beans, white rice, raw onions and steamed broccoli.
