Sea Bass and my Speical Sauce

Sea Bass and my Special Sauce

So we had some beautiful Sea Bass from my good friend and fishing partner defrosted and ready to go. I tried my hand at making a red sauce and I really liked the results.
Roasted these, Pablano's, Tomatillos, Red Onion, Tomato, Jalapeno, four cloves of garlic

In the processor with some EVOO, Cumin, Kosher and fresh ground. Then into a pot to simmer for an hour or so.

Fish with some EVOO, S&P, and Mrs. Dash no salt lemon pepper.

On the OTG with Lump Charcoal and a piece of Apple Wood, Yukon Golds just about done cross slit and spread open a little and drizzled with butter, pepper and granulated garlic

Fish, beer and potatoes done after being browned upside down for a few, heading in.

So, you guys know the old saying, an expert is someone from the next state over? Well, this week I bought a six pack of beer made in Lambertville NJ. Twenty minutes from my town. You know what, fantastic. One of the best beers I ever had. Whod a thunk.

Just tried some sea bass last week for the first time. Looks great. What basket are you using for the fish?
 
That's a good looking meal!
And I try to pick up some River Horse when I travel through Jersey. Real tasty stuff there!
 
Bill my fellow fisherman, glad your friend doesn't practice catch and release.;)

That red sauce sounds like a keeper and perfect for the white sea bass/grey ghost.

Ill take a plate of that for sure, 10% beer ….one and done.
 
Once again you cook to perfection Bill! That is one delicious plate of food.
Thanks for posting the recipe on the red sauce, will have to give it a shot!
 
great cook. When I saw "sea bass" in the title, I figured it was one of us northeastern coast guys. I had fresh pollack for dinner the other night. The cod is on the bite too... I'm going to wait for some slightly warmer weather to go and harvest a few. (hopefully).
 
Great looking cook. It's delicious AND healthy!

How did the wine pair with the fish?
