seasoned the meat with a Santa Maria mixture of salt, pepper, gran gaaaaalic & onion, with cayenne.
red oak wood in the mix of the Royal Oak lump down there for smoke flavour...
seared for 5 minutes each side then indirect until the internal temp hit 125ºF.
added a server of mushrooms 'bout halfway thru...

Dang Jim, just got done droolin' over your brats!
Perfect looking tri, and dig the 'shrooms & large potato too!

so, your impression of the lump?
Jo and I are heading out shortly to save big money at Menards.

That's a hungry mans plate!! It's a beautiful sight.. Well done Jim. Happy Friday my friend. :)

Where did you find a tri-tip ? I have looked around for the last year or so to see if any stores near me carried it and I have never seen it.
Looks great...I really need to rediscover my smoker and grill. Its just the weather lately (ha not today however) has severly dampened my motivation....

Thanks guys!
Bob, the lump is worth it! 8 lb bag for 5 bucks and a mail in rebate of 2 bucks a bag... yeah, good stuff, good size lumps too.
Matt, Trader Joe's. And now there is one NEAR YOU! on Bluemound road, and i think 120th street (across from the UPS building). 7 bucks a pound.

Great looking tri tip and sides!!! You are right, there is something about a tri tip that makes them amazing!

Awesome looking tri tip, sides and photos Jim! I use Royal Oak
lump all the time but have never seen it in that colored bag. The
ones I get down here a red bags. It is either something new or a
regional thing.

I tried to research the 'green bag' but only found that some claim it's just the regular red bag stuff, put in a different bag for Menards only.
This supposedly coming from a Royal Oak rep.

Jim, I don't think there is any dish out there that you couldn't make into a Wisconsin special....great lookin' meal!
