Sandwich Steak = Endless Options

Pulled a bag of "Sandwich Steak" for the first time since Melinda's out of town. Never heard of this, but think it's just what my butcher calls this. Looks like skirt steak, and it has turned out to be amazing. Here's a few ways I used it yesterday.

Marinated in balsamic vinagrette dressing, soy sauce, and lime juice with some S&P and garlic salt sprinkled in. Would have liked fresh cilantro, but what are you gonna do?

Got a full chimney going while the boys napped. I knew it'd be way more charcoal than I needed for cook, but I wanted it hot. Let the meat rest out of marinade while cooked some onions on foil.

Made sandwiches with provolone and onions for lunch. Daddy eats the heels so nobody else has to. Beer while the boys nap is justified. I don't know how Mommy doesn't drink every day :)

Dinner was tacos for me with sourcream, lettuce, tomatoes, red onion and Tapatio hot sauce. That's grated parmesan cheese on top because it was only real option. Anyone seeing a pattern here when Mommy goes away? ...barebones survival!
Charlie got steak straight up with a little A1 for dipping and cantaloupe.

Thanks for looking. Gonna finish up meat today with Italian Steak Sandwiches. Melinda left a batch of her amazing sauce so I'm gonna put it to good use.

I say the same thing myself all the time. A coupla nice meals there though. And good to see the kids aren't missing out on their fruits and veggies. Mommy would be so proud.
 
Lunch turned out fantastic. Used the last of the steak, pan-seared onions, provolone cheese, and some great sauce.

Also made a pasta side. Fried angelhair pasta, with minced garlic, red pepper flakes, shaved parm, and a bit of melted butter at the end.

It's a really great dressing. This is first time I've ever used it as a marinade, and I've got no compaints. It's probably a little sweet for some cooks, but for something like this it was great.
 
Luke, if I had more of that sandwich steak left I would grill it like you did and then put it in the middle of a grilled cheese sandwich
along with your onions diced. I also like to use sandwich steak cut up and grilled with onions as the start of a pot of chili. Lots can be done with
these little sandwich steaks.
