I've been dying to do ribs with salt & pepper. Did today 2 parts CBP to 1 part kosher salt. 3 hours in hickory + apple then (egads :o ) 1.5 hours in foil.... finishing with 45 min in hickory.

At first, I really regretted the foiling.....I pulled them out and they seemed way overcooked (and difficult to handle). But, they did seem to tighten a bit after going back in for that last 45 min. That said, I wouldn't go past an hour in foil next time.

My family LOVED them, but I think they'd boil them if I was dead or not around. I have to admit they ate up pretty darn good. Finished with Danny Gaulden's glaze
