Roasted Red Curry Chicken and Thai Spiced Potatoes

We've been eating a lot of Thai and Indian food lately. Cooked this up the other night. Pat's Thai Chicken cook a couple of weeks ago got me thinking and I went to work on something similar.

Did the prep earlier in the day. These are the ingredients for the spiced potatoes. Along with the gold potatoes are 2 red chopped jalapenos, some ginger, brown sugar, chopped garlic, scallions, chopped cilantro and Italian parsley and some chopped peanuts. The liquids are oil and rice vinegar.

These guys have popped up at our grocery recently. I chose this one for it's size, around 3.2 lbs.

Here's my rub and glaze ingredients. Red Curry Powder, some lemon juice, ground ginger ( the one on the left with it's back turned... nice Cliff) and ground cumin. The apricot preserves and grainy mustard are for the glaze.

Rubbed down and ready for the smoker.

Up and rolling, around 350-375.

Roasted the potatoes with some salt and oil, around half hour or so.

Checked the bird after about an hour. About 150 in this shot.

Applied the glaze with about 10 or 15 minutes to go.

Potatoes done and nice and crisp.

Folded in the rest of the ingredients.

A couple of handfuls of fresh asparagus with a little oil and a dusting of the red curry powder.

This came out really well. Wasn't quite as spicy as I'd wanted, what I'd call a moderate heat. Might try with the green curry next time. The potatoes had a nice flavor and sided well with the chicken. Anyway, that's it. Thanks for looking.
 
Man you are eating good. I've been eating (and looking at) Thai recipes lately too. I was going to make a Thai cucumber salad that called for roasted peanuts & all I had was raw hazelnuts....I roasted a bunch of them & they tasted I don't want to say like popcorn but they kind of did!

OT: I also saw another roasted chicken Za'atar recipe today that looked almost as appetizing as your dinner. I'm not eating well tonight, I'm sipping drinks (Makers + coke & Gin + Squirt maybe later. Another bowl of leftover hot & sour soup (chicken instead of tofu) will be my dinner.
 
That looks great Cliff, glad I could influence your cook. Chicken looks great, loves those potatoes.
 
Cliff I spent a bit of time in Thailand and never had anything as good looking as your chicken and potatoas.
As I remeber the street vendors always left the feet on.
Ate tons of Cowpot ( fried rice). I always love there fruit too.
Please keep these cooks coming you give me so many ideas, thank you.
