Redemption and a little Recovery

The redemption comes from making a good meal after the chuck rib fail.
The little recovery was saving a piece of the grilled chuck from becoming a dog treat.

Salt, sugar, lemon juice, and garlic brined breasts along with the chuck in foil with butter.

The chicken was cooked to perfection, and it was graded "excellent" by Jo, I agreed.
Now about that little pre-grilled chuck piece.
I had it going on the grill at about 250/275 for 3 or more hours, and it was fall apart tender.
You see it on my plate, but after one bite I decided to save the rest for breakfast.

So this morning I made SOS, and it was terrific!!

Thanks for stopping by!

Nice cook and recovery! It's been a bazillion years since I've had SOS you've inspired me to do it again.

I second Rich, that looks awesome. I haven't heard SOS in years and some people would look at you like you had two heads! They have no idea how good that is.

That's a fine cook, although I failed to see anything wrong with the previous cook. Did you toast your bread for the SOS on the BBQ? Extra points in that :)

Thanks for the kick in the head Bob. I just spoke to Nancy and it's SOS for dinner tonight. It's been years and I miss it.
