Real Chuck Eye Steaks

With all due respect, I've seen a few posts of chuck eye cooks where, to me at least, they did not look like true chuck eyes.
Some say they will get tough if cooked past medium rare, and I do not find this to be the case.
So I decided to cook 3 to medium/medium well.

Salted only, out of fridge for an hour, dried well, and hickory smoked while 2 baskets of lump came up to temp.

Now here's what I'm talking about, these things might fall apart even more at well done, but still be tender.

Looks kind of medium rare in this pic, but it was a full medium.

Forgive my "caprese salad" I went with what I had, cherry toms from the garden, provel rope cheese, garlic olive oil, and S&P.
The steaks were fork tender and juicy.

I suspect some meat cutters are packaging other chuck cuts, like chuck tender, or chuck mock tender as chuck eye steak.
The chuck tender steaks sold around here do not have marbling like a true chuck eye.

My only problem is that they're getting popular, and hard to find lately. :(
 
boy I wish I could get that cut around here. we just don't see those. how much a pound do you pay for those (if im not being too personal) :p?
and wow , cherry tomatoes already ! mine are all green , but the zucchini is going gangbusters.
 
I think you're right Bob, Barb and I have had some so called chuck eyes that lacked that deep marbling and if cooked past med/rare start to get tuff. The true Chuck eyes can take a cook up to med/well (don't know about well as I never go there) and still be very tender. I'm not sure the butchers around here know exactly what a true chuck eye is, so I'm very careful when I see something labeled chuck eyes anymore.

Frank, like all beef the price is up, I paid $6/lb for these, used to get them for under $5.
So much rain here my zukes died out, and tomatoes are going the same way I fear.

6 a pound isn't bad today for nice looking beef like that.
i just picked a buncha zukes today. I wish I could pass a few over the fence to ya .
 
Those are tasty looking steaks! I've never seen a chuck eye in our stores. There used to be a butcher here that had them but he is no longer around.
