rainy day pork steaks

seems like it's either snow everyday here or rain everyday here...
now, lot's of standing water everywhere... butt in my kitchen.
that's where i seasoned these two pork steaks with BBQ3000 and Galena Street

while out & about, I found Cowboy Lump Coal...
hear how great it is, I brought home a bag.

fired it up inside the 26"OTG with apple and hickory wood...
sear for a minute or so (actually, a wasted practise for me with pork steaks)

and then indirect for about two hours. These steaks were (as always) marinated overnight in Wicker's.
not much else to do for those 2 hours butt watch the rain... from INSIDE the pigvilion.

then, when the pork seemed pretty tender, i sauced them with PAPPY'S Holly's Hot Sauce

ha ! definately my favorite. when someone else is eating it. i do confess to being confused though. (first time ever).
i'm not getting folks indirect cooking pork steaks for hours. those things cook up purty quick as it is.
i usually just grill them like about 6 minutes each side and they are done. so why the looong cook ?
oh yea, those do look awesome though !
 
george, i order my steaks from a meat cutting service, you tell them how thick you want your steaks, they cut them to size.
regular pork steaks sold at local grocery stores are cut between 1/2" to 3/4"... i ask for 1 inch minimum.
These were about 1 and 1/4 inches thick. Like slabs of pork butt.
cooking them low (250º) and slow brings out the BEST in pork steaks.
 
Perfect pork steaks Jim. I think you've hit the nail head on. Pork steaks benefit from a little low and slow to tenderize. Happy eetin'!
 
Some great looking pork steaks!!! Your more reliable than the Postman, a little weather isn't gonna stop ya!!
 
Every time you post a pork steak cook Jim, I think to myself "pork steaks?" I don't think I've ever seen pork steaks at my grocery. But, because of posts such as this, I'm lookin' baby, Oh I'm lookin'. And if I do find them, and I even get close to this, I'll be a happy man.
