seems like it's either snow everyday here or rain everyday here...
now, lot's of standing water everywhere... butt in my kitchen.
that's where i seasoned these two pork steaks with BBQ3000 and Galena Street
while out & about, I found Cowboy Lump Coal...
hear how great it is, I brought home a bag.
fired it up inside the 26"OTG with apple and hickory wood...
sear for a minute or so (actually, a wasted practise for me with pork steaks)
and then indirect for about two hours. These steaks were (as always) marinated overnight in Wicker's.
not much else to do for those 2 hours butt watch the rain... from INSIDE the pigvilion.
potatoes were also added...
then, when the pork seemed pretty tender, i sauced them with PAPPY'S Holly's Hot Sauce
