Quick Chicken Shishkabab on the OTG

Hello All,

It has been a challenging week and I found myself rapidly approaching dinnertime with no plan. I decided to do a quick shishkabab with some boneless skinless chicken thighs and bacon. I also set up a few skewers of zucchini. I marinated the skewers in an emulsion of EVOO and lemon juice. Below are (very few) pics of the proceedings:

This turned out pretty good for a dinner on the fly. Total elapsed time on this meal was about 1:15. The chicken had a great texture but was lacking a bit in the flavor profile (two hours of marinating would have fixed this and I failed to reserve any marinade to use as a sauce at the table which would be helped too). All in all a passable and very inexpensive meal. Thanks for looking.

Looks great. I grill zucchini a lot but usually cut it into long strips and just throw it on the grill. I like the idea of skewering it.
