Question about using both racks on WSM

I have had the 18.5 for a while, but have never had to use the lower grate because I am not cooking that much, but now I have to cook several butts and some ribs for a get together in a couple of weeks

I was wondering how the food on the top rack dripping grease onto the food on the bottom rack affected the flavor of the food on the bottom rack. I know some of the drippings I get on my foiled saucer seem really greasy.

I have 2 18.5 so would it be better to do ribs on one and butts on the other. I would prefer to do it all on one, especially since I need to eventually learn to use both racks

I would say if anything it makes it taste better. Put the ribs on top and the butts on bottom. Easier to remove the ribs first as they will be done first. And lose the least amount of heat opening and closing the lid. I do it all the time. Ribs don't drip much anyway.

Pork is pork is pork. Don't worry about it.

Ribs on top/butts on bottom for reasons already said.

I would do what Tim suggested... Take pics and share. Drunk plenty if adult beverages. :)
