Pulled Pork

Bought a 9.3 pound pork butt and cut into two pieces so it would be finished faster.

Dusted and onto the grill @ 6 am.


5 hours in.


The larger half @ 198 degrees and ready to come off at 4:30 pm and I did not foil.


Plated.


Everyone said it was very good but I was not impressed but usually on a long cook like this I'm never completely happy with the end product that day even though everyone else is. Now on the other hand the next day when I eat some of the leftovers I think it tastes exceptional. Maybe my taste buds are affected by the long cook and exposure to the smoke? Anyone else experience this?

I'm the same way for some reason I like ribs better the next day or when ever I eat them. Don't forget BBQ guys are their own worst critic:o

I must say the bark looks great and plated pic looks delicious. :wsm:
 
I have to say Im in the same boat as well. I think I snack and drink too many pops so when the food is done Im too stuffed.
In any event it looks good to me.

I am my worst critic but I'm looking forward to having some of the leftovers today or tomorrow and tasting it with a "clear" head. As far as the bark I think that not foiling it at 160 degrees or so helps that but you do end up with a drier meat in the end due to not foiling so its a trade off.

Keep up the good cooks Tony because I really look forward to seeing them.
 
Looks good Dean...I agree with some of the above comments...sometimes smelling wood smoke all day makes you unable to appreciate the smokey goodness and then the next day Bham..it's super!

Looks great Dean. I love PP anytime but I think you're maybe it's the bark breaking down flavoring the meat. Good job, nice plate.
 
I dunno, by the time I finish cooking I am hungry so it's pretty good. However, leftovers are always better. I dunno if it's letting the smoke marry with the meat under vacuum or what but it works everytime.

It looks like it you had a great bark and smoke ring.
 
Nice looking PP. I think the reason you don't like your BBQ the same day is because you are smelling the meat, rub and especially the smoke the whole day and you kind of get desensitized to it throughout the day. Everything tastes smokier the next day to me. Taking a shower or even just changing your clothes after you are done really helps before you eat.

John, I think you are right on. I will try the shower thing the next long cook because is disappointing when everyone thinks its great and I think it is only so so.
 
I'm with you dean, always tastes better to me the day after, but I think that goes with what John said. Smoke exposure and all the work with the meat and seasoning has a weird effect. But when the left overs are dug into aw man! It makes me feel like a pit master!

Great cook, that food looks delicious and I am sure it was very tasty.
 
Everything looks delicious! I too have the same problem with not being able to taste the smoke or the
flavors until the next day.
