Pulled Pork Tamales

It was cold and wet yesterday -- a perfect day to BBQ a small pork shoulder. I had boned the shoulder to make Capicola and had a scrappy little chunk left. So, I tied it up and cooked it low n slow on the 14.5".









I packed some for later



...but for some I had another idea. I added some cumin, tomato paste, oregano, salt, onion, and garlic



soaked some corn husks





made some masa dough

 
Awesome tamales Dwain, nothing better than 3 tamales and scrambled eggs for breakfast covered with salsa.

If you want you can put the tamales in a CI with a little oil to get them a little crispy.

Nice work Dwain! Tamales are so much work though. My neighbors make them for christmas every year. When they make them they make like 60 dozen lasts all year and pass out to friends. Big family get together, cook, and dinner.
 
Nice work Dwain...we were thinking something similar but I'm going to try PSB...season with a little carne asada seasoning!!

Wish I had a couple for breakfast right now!! They look great!
 
Darn perfect cook and great pictures....I do love tamales and I don't eat them nearly enough. Is that a new probe on the pit? I can't remember if my probe ever looked that good.
