Prime Oyster Cut and Veggies

So you Guy's remember I froze half of a Oyster Cut Prime London Broil from a cook a month or so ago. Well the other half was defrosted over night and cooked today.

Started with using one of our stored Buttercup Squash's from our garden, they are fantastic. Cored, cubed and par boiled for five minutes then dried

Four small red potatoes cubed up, one red onion, five cloves of garlic. Cumin Thyme Kosher and fresh ground in the CI on the Genny

Meat indirect till 110 then on for a sear

Good meal tonight with some fresh bread, good wine and family

Bill, can you make room for two more that looks fantastic. Better make that 4 places couldn't leave the girls home alone!!!;)
 
Wow, that is the nicest hunk of beef I've seen, well, since your did the first half I guess. Love the veggie dish too. Plate and the bread superb.

The Butcher's refer to the first cut off the top round as an Oyster cut due to its shape I believe. Considered the best cut for a London Broil.
 
Oyster cut, eh? Sounds brilliant, and I'm fascinated. I'll have to ask my local butchers it they can cut a London broil this way for me. Excellent cooking as usual, Bill.
