You have some noise, you might want to check your soldering and make sure you have good connections or it could be a bad power supply. You also might want to try adjusting your PID settings also you have what looks like a sine wave

I want to make bacon! I will be heading to the butcher shop tomorrow. Currently looking at your cook looks like your temp is getting away from you currently at 235.

Usually cold smoke my bacon under 100 using my cold smoke generator and finish at 225, cooking to 150 internal. I was impatient was shooting for 225 for hot smoke, used too much wood got wood fare up. My big steel keg is very hard to drop temp once it over shoots. Filled water pan with ice to drop the temp.
 
Sometimes you just have to marvel at the Interwebs. Checking out some dude's cook from across the planet...ya, that's one of those times. By the way, you're a smidge over target temp. :)

Sal, I have the same setup as you. Here are my PID settings, and it works like a dream.

B=2
P=3
I=0.005
D=5

Servo Open/Close only

I was too lazy today. I started smoking some spare ribs and my smoker/HM were plugged into my outside GFCI outlet. It tripped about 1/3rd way into the smoke and I didn't notice until normal dinner time. I guess I'm having late dinner tonight. And thinking about fixing my GFCI outlet sometime because I've been having issues with it lately.

"Cold Smoke" for some jerky.
Using an electric hot plate and stainless steel bowl of chips for smoke.
Elk roast cut into .25in thick strips, rubbed with salt and sugar, washed with vinegar, rinsed with water and then a second round of salt, sugar and black pepper.

This is my first attempt at cold smoking and dehydrating on the WSM.

Having a party tomorrow. Smoking a butt over night and then a chicken and 4 racks of ribs tomorrow before guests arrive for supper. This is my first overnight smoke with the HM. Hope it goes well. Seem to be getting noise on my meat probe, don't know what's up with that. It's a brand new Maverick ET-73.
