Our local supplier stopped carrying pork belly.
No worries, we found a new source at a local farmer's market!
Got a 3 pound hunk last weekend and another yesterday. Took the one we got last week and cured 2 hunks for bacon. A hunk went into the freezer for whatever we desire, and I cooked one for dinner last weekend. Rubbed it with a combo of salt, pepper, Chinese 5 spice, cumin and coriander. Smoked it on the kettle for about 4 hours until it reached 165* and let it cool. Pammi made some steam buns and quick pickles (cuke and red onion). Only one pic, but it's a winner!

OMG! So amazingly good!
The parts I cured for bacon were ready today. This is what they looked like before I snaked 'em on the kettle with some maple chips.

This was my best slab yet! It'll be coming to St. Louis on beercation with us next month!
And Pammi wanted pork chops for Mother's day. Can do! I cooked her a couple thick chops, some skillet purple fingerlings and she made fried green tomatoes.

That's a roasted garlic gremolata on the pork chop. Very nice!
