Pork shoulder on the WSM

Cooked my first ever pork shoulder this weekend. I picked up a 10 pounder at the market on sale. Used mustard for the first time ever as a "glue" not sure I noticed much difference in tatste. For the rub I used some Memphis dust. Meat went on at 10:00 pm.

Smoker stayed right around 225 all night. Here is the shoulder at 12hrs.

Took meat off smoker when it registered 190 and was probe tender. Tottal cooking time 15 hrs.

I let the meat rest for a few hours in a cooler before pulling. Had pork on a sandwich along with some baked beans.

One of my neighbors was trimming his cherry trees and said I could have all the wood I wanted. I gave him some pulled pork as a thank you. Looks like I won't need to buy fruitwood for a while!

You'll always remember your first shoulder ( just kidding). Your own supply of fresh fruit wood- that is great.

Great cook and score on the wood! I'm still bugging my friend about getting some chunks off his peach tree!

Nice cook! Reminds me, I need to hit up the cherry orchards for trimmings since cherry season is come and gone
