Pork Picnics Take A Bath

Inspired by Robert-R's post on Crunchy Tacos (post is here: https://tvwbb.com/showthread.php?71259-Crunchy-Tacos ) I decided to try a similar preparation with a couple of pork picnic pieces. Since they are generally leaner than a butt I thought this might work well. The two picnics were from the last side of local pork we bought.

Seasoned with salt and homemade rub, I smoked them on the WSM with some apple and cherry chunks. Running out of time and fuel, I pulled them off at 160. Into the bath they go:

The Mexican oregano adds a really nice character to this. And just enough warmth from the chipotle. (Yes I wimped out a bit ;) )

Here is the yield, and the remaining liquid was blended back in. Great flavour.

No plated pics, these were served burrito style in flour tortillas, with aged cheddar, lettuce, tomato, cilantro, and salsa verde. Will definitely use this method again, maybe next time with some chuck roast.
 
The pork looks beautiful. I'm sure the burritos were good. I'd almost guarantee it.

Glad you liked the recipe. fwiw - you can also "toast" the shredded pork in juices in a shallow pan under a broiler set on high in your oven. Turn it over several times as needed. Mmmmmm.......
 
Nicely done Mark! That bath is proven on Beef & Pork, and I dare say I bet it would be good on cluck cluck. And yes, I'm willing to give it a try
