Pork chops in the dark

Hey gang - sure is gettin' dark earlier and earlier :(. My boss at work bought his niece's hog at the fair this summer, and is sharing the finished pork with me and my co-workers (whoo-ooo). Future references to Lucky's pig will be this particular piggy! Started out with a two tater and zuke packet: EVOO, s & p and Kickin' Chicken.



A pair of chops dusted with Pig Salt for a day. Not as big a Jim's clubs, but better than what I get at the Dollar More store!



indirect on Old Red w/ a split chunk each of hickory and apple. Almost a full chimney of KB. After the first flip = Flame On!



a little bit later, scutched closer to the fire



getting ready to pull 'em, slathered w/ Pendelton barbecue sauce. I like the whisky, I like the sauce!

Total cook time was about 30 minutes. Believe it or not, there is a fair amount of pork on the plate. I need to quit covering up the protein with the rabbit food! I'd be crackin' on me, too! Gonna be a nice weekend, hope you enjoy yours! Seeya next time.

I'm guessing a 4H hog?
I have a grandson in CO who raises a pair each year for the fair.
But I've never been there when they're auctioned off.
 
Beautiful cook Brian, pork doesn't get any fresher than that,......sometimes we gotta keep management happy by eating our Rabbit food!
