Hey gang - sure is gettin' dark earlier and earlier
. My boss at work bought his niece's hog at the fair this summer, and is sharing the finished pork with me and my co-workers (whoo-ooo). Future references to Lucky's pig will be this particular piggy! Started out with a two tater and zuke packet: EVOO, s & p and Kickin' Chicken.

A pair of chops dusted with Pig Salt for a day. Not as big a Jim's clubs, but better than what I get at the Dollar More store!

indirect on Old Red w/ a split chunk each of hickory and apple. Almost a full chimney of KB. After the first flip = Flame On!

a little bit later, scutched closer to the fire

getting ready to pull 'em, slathered w/ Pendelton barbecue sauce. I like the whisky, I like the sauce!

for your approval

Total cook time was about 30 minutes. Believe it or not, there is a fair amount of pork on the plate. I need to quit covering up the protein with the rabbit food! I'd be crackin' on me, too! Gonna be a nice weekend, hope you enjoy yours! Seeya next time.
