Pizza Kettle breakfast

I've been cooking breakfast outdoors a lot lately, and was lamenting the fact that we didn't have a proper broiler to make fritattas with. And then a couple days ago the light bulb went on- of course you own an outdoor broiler dummy! :D
So yesterday morning I grabbed a handful of veggies out of the garden and headed to the cabin before the sun was up to experiment.

Started the peppers and sausage in a skillet while a chimney of coals were warming up.

After adding the rest of the ingredients to the skillet, let it set up just a little before going into the fire.

Since I had somewhat gratuitously used a bunch of charcoal and hickory for a very brief cook, I toasted some English muffins with them and opened up a jar of homemade peach jam. All in all, I was pretty pleased. Next time I will try to give this a little more Italian flair instead of just grabbing things off the shelf, but the technique worked very well!

The view from my house kinda sucks- gravel road and a bean field lol. This is about a mile away from where I live, my sister bought a little cabin last summer and getting it moved to this pond at the farm and setting up a pad has been an ongoing project for awhile now. At least it's a good excuse to acquire more Weber toys and accessories! Sooner or later, I may build a house on the other side of this pond. Here's what it looked like from on top of a silo a couple months ago, we have since built a roof over the patio in front of it. Nothing fancy, but a whole lot cheaper than a condo at the lake!

while I was born/raised in the suburbs, i'm a country boy at heart and even that pic looks heavenly to me.
