Pit Barrel Sunday

Today was a double pit barrel cook. Started about 8:30 this morning with the chicken & pork roast. It was 29 degree's when we got started. Chicken was injected with broth, EVOO & butter & seasonings. Then seasoned with S&P, seasoned salt, onion & celery salt. The pork roast was rubbed with yellow mustard & seasoned with Memphis Dixie rub, Cabela's Baby Back Rub & All Purpose seasonings. Left in fridge overnight,

Chicken is done after 3 hours on the pit. Looks good
Three hours later the pork was ready to be wrapped. and 21/2 hrs later this is the end results, moist & tender and done. Much like DallasShredded & ready to eat
Simple sandwich & baked sweet potato that was cooked in the barrel also, after the game of the year, Denver & Dallas. It don't get better than that. thanks for looking

It was a great game until the romo interception. Oh well I will continue to support my team. Not like some texans fans that are trying to get rid of Matt Shaub...lol burning his jersey and all. ....lol

That is why I called it the game of the year. It's gonna be hard to beat that the rest of the season. I knew Dallas would be loaded for bear. They gave Denver everything we wanted. but in the end, Tony Romo does what he always does & helps the other team win.

The cooker works fantastic. Fill it up and forget about it. That is why I bought it for football Sundays. I have 2 wide screens going busy watching the games & don't have to worry about adjusting vents or messing around, just check temp and pull it off when done. the meat is always juicy, tender and great flavor.

Looks great......heck, I record my games and watch one in fast mode, skipping commercials, halftime, and time outs etc, even speeding up between plays..........yesterday, I watched two games in the time of one.........both started at one, and finished about the same time, though one went into OT.......sometimes when a game starts, I start recording and go do something else for 30 min. and then start watching, even then I will catch up somewhere in the 3rd. qtr..............d
 
looks like that cooker should be capable of putting out a decent Tri Tip Russ.....
