Today was a double pit barrel cook. Started about 8:30 this morning with the chicken & pork roast. It was 29 degree's when we got started. Chicken was injected with broth, EVOO & butter & seasonings. Then seasoned with S&P, seasoned salt, onion & celery salt. The pork roast was rubbed with yellow mustard & seasoned with Memphis Dixie rub, Cabela's Baby Back Rub & All Purpose seasonings. Left in fridge overnight,

Here they are loaded up and smoking away
Chicken is done after 3 hours on the pit. Looks good
Three hours later the pork was ready to be wrapped. and 21/2 hrs later this is the end results, moist & tender and done. Much like Dallas
Shredded & ready to eat
Simple sandwich & baked sweet potato that was cooked in the barrel also, after the game of the year, Denver & Dallas. It don't get better than that. thanks for looking
