Thanks Rich, the presentation, dishes etc. is definitely all her! There’s a fancy dish for anything and everything here! She loves to make things special. She didn’t have a “hope chest”, it was a “hope room”!

Last night’s meal was a simplified jambalaya like concoction. We had a bag of clams that needed to be used, a small piece of smoked sausage and some leftover corn. Added some tomatoes and Cajun spices and put it over some boxed yellow rice. It was missing some components and didn’t have the depth of flavors like a true jambalaya but it was very tasty.

And I opened a box of Zatarains jambalaya and added a hillshire smoked sausage..:(
 
Duane... I see that you too appreciate certain pepper mixes, ie Flat Iron Pepper Co !
