Peach Cobbler

I was out and about the other day and stumbled upon a roadside fruit stand. I found these. You know what's coming.



I swear, these are the sweetest, juiciest peaches I've ever seen. I peeled them and mixed with some cornstarch, brown sugar, water, butter and lemon juice.



Got the filling in a dish and put on my topper. Sprinkled with white granulated sugar.



On my little WSM, running at a steady 400. No water in pan, everything wide open. Used my ATC.



All done after about 40 minutes.

Thanks for your comments on both posts, Jim. Hey, have one piece left. I could mail it. Ha. Haven't seen any of your cooks posted in a while. Maybe I just missed them. Hope that Gulch Fire didn't cause you any problems.

I picked a bushel of peaches last weekend, and most are going to become wine. However, I made a cobbler the other night. 'Tis the season!
 
Hey Tim.... I made it myself. One cup sifted flour, 1 tbsp. sugar, 1 1/2 tsp. baking powder and 1/4 tsp. salt. Sift all these together. Cut in 1/4 cup butter. Then add 1/4 cup milk and one beaten egg.
