Party Ribs!

First time trying ribs this way and I don’t think I’ll ever do a full slab again. These were just too easy and fast. Total cook time was about 2 1/2 hours.

I cut the ribs up and used Meat Church Hickory for the rub. Used FOGO lump and apple wood chunks in the WSK. Ran temps between 250-300. Still learning the WSK. At around 180 IT, I put the ribs in a foil pan with butter, brown sugar, and Blue’s Hog Chipotle Raspberry. Covered with foil and placed back on pit until about 205 IT.

Tender but still had a bit of bite. Bark and flavor all around. These were a hit with the family.

Looks great Josh. Haven't tried doing them yet but likely will soon.
 
Well, splash me with flour and call me bread! I just did a straight rack on the kettle and. NOW I am reminded of the single rib style! The rack went on about 16:30 and didn’t come off until almost 20:00! IMG_1330.jpeg

First rib cook in over a year, turned out nicely, maybe snack on a couple of the, for lunch today!

Those look great! Nothing wrong with ribs for lunch. I just had some for lunch myself!
