Overnight Boston Butt on the Jumbo Joe

Gave the JJ its first overnight run with a boston butt. Weight was ~5.4 lbs, rubbed with Bad Byron's.

Off to sleep she goes. Used a 3:1 mix of cherry and hickory.

This is a bit more than half way through. I was rotating the shoulder about every 2.5 hrs to promote more even cooking. No foil this time.

Off the Jumbo Joe, tented with foil for about an hour or so before pulling. Total time on the JJ was around 10 hours.

Next time I cook one of these on the JJ I will likely foil some during the cook. Some of the bark was a bit too burnt for my taste. However the smoke ring on this was really great, and flavor was spot on. Again, pretty impressed with how well the JJ does these low and slow cooks.

Way to use that JJ, Teddy. PP looks delicious and I love how you presented it. I love PP sandwiches but sometimes I just like it with delicious sides. Lighter without all the bread. Looks fantastic. Sides are wonderful too.

Never supposed JJ could last for 10 h. Anyway that pulled pork looks perfect!

I've been finding that one charcoal basket will burn approximately 3-3.5 hours before needing to be refilled. So basically this cook used 3 baskets. I was opening up the lid to rotate the butt every 3 hours or so anyway, so timing worked out well.
 
Did you use the snake method? What were your vents set at? Your temp?

Hey Paul, I actually just used one of the charcoal baskets. You can see it in the picture below. The bottom vent was open ~15% or so. I don't have a thermometer so not really sure on exact temp, I would estimate between 250-275.
