With Pammi’s surgery last week, Turkey Day fell on my broad shoulders! I’ve always done the turkey, but the whole meal fell on me! While I’ve done this in the past, I’m a little out of practice on all the sides Since Pammi usually does those!
Pammi cooked some cornbread and cleaned the green beans yesterday, so it was nice having that done.
I bought a fresh turkey on Monday and split it in half, with half getting vacuum sealed and squeezed into the freezer.
The other half got salted and put on a rimmed baking sheet with a rack.
Out of the fridge and coming up to room temp.

I then made some compound butter for under the skin and onto the kettle.


It took a little over an hour and looked amazing

I made dressing out of the cornbread, mashed taters, sautéed green beans and Pammi made the gravy, plus we had crescent rolls from a tube and canned cranberry sauce.

Mom made a pumpkin pie and a raisin pie. Sooo good!
I’m stuffed, but still looking at the leftovers!
