Reverse seared some Costco NY prime strip steaks tonight. These took about 30 mins at 275 on the Kettle to get to IT of 115. I took them off to rest while I got a chimney screaming hot with Vortex flipped upside down. I seared for 2 mins each side which was too long. These still came out solid but just a tad charred. I salt brined for about 10hrs and seasoned with Carne Crosta, my fave rub.

Overall great dinner with a solid wine!

Beautiful steaks! Nicely done on the reverse sear; there is zero gray band. That’s my favorite way to grill steak. Your pictures are reminding me that I want to try a board sauce. I also have a few bottles from Paso tucked away. Nice way to spend a Friday night.
 
Looks great from here, Andy! I like a good char, and I bet it went down really nicely with that Cab! :)
