We decided on meatloaf for dinner tonight and I left it up to my wife to decide how she wanted
me to cook it. She asked for my “Not My Mamas Meatloaf” that I did last June, so here it is.
Meatloaf was made with the normal ingredients (egg, onion, Panko, peppers) and I added some
Pico de Gallo, Pepper jack and Colby jack cheese to the mixture, along with some Weber Kansas
City BBQ rub. Meatloaf was then enclosed in a weave of bacon and seasoned with the KC rub.
Put onto the Performer, using my Smokenator with KB Blue and pecan chunks. Shooting for a temp of 250 for the 1[SUP]st[/SUP] hour or so.
Mac N Cheese and homemade baked beans onto the Performer.
Almost there so I coated the meatloaf with some homemade BBQ sauce.
10 minutes later dinner is done!

Yes, I know, not the healthiest cook out there, but to us it was the most delicious one! Everything
was cooked the way that we like it.
