New Tri Tip Recipe with Salsa

Barb and I really like tri tips and around here we find them in the dog food section all the time. Although after seeing the picanha that Robert R posted I may change my mind about what’s number one…If I can find it here.
Anyway I was cruising through some Weber books and found a tri tip recipe we haven’t tried in the Weber’s Big Book of Grilling called Smoked Santa Maria Tri Tip.
It has a rub and a salsa that sounded like a very different way to serve tri tip.
Used red oak for the smoke.
Barb grilled up some zucchini and red potatoes for the sides.
The rub was pretty basic but did add a lot of flavor and a little bite to the meat, but the salsa was outstanding we even used it on some scrambled eggs the next morning and found it was also excellent with tortilla chips.
This one is a keeper especially the salsa.

That would be a great cook for Cinco de Mayo, just add some cold ones.
 
Some folks were wanting the salsa recipe so here it is.

Tri Tip Salsa

2 cups diced ripe tomatoes
1 Can (7 ounces) diced green chiles
8 green onions white part only thinly sliced
2 Tbs. finely chopped fresh cilantro.
2 tsp minced garlic
2 tsp red wine vinegar
½ tsp prepared horseradish
½ tsp Worcestershire sauce
½ tsp kosher salt
¼ tsp tabasco sauce

Mix all ingredients together and let sit for an hour or so to allow the flavors to meld.
