New (to me) baby Jambo


 
That makes the Jambo a top down cooker, which if a cooker is gonna exhaust at grate level then it needs to be top down.

The Brazos I had, used a baffle to direct air flow and heat down. Then it exhausted at grate level. So all the air/heat was flowing mostly under the meats. To counter that, I had to cut the air flow way down, so it would rise up into the cook chamber.

Franklin really has nothing at the exchange. There's a shelf at grate level. Its a top down cooker.
 
It is a little on the large side. The cooking chamber is 24x48. A couple butts and briskets would fit no problem but who the heck can afford brisket these days! I actually have an srf I bought on sale a couple months back so it might get the call.

The real bummer is next weekend we will be out on a "camping" trip next weekend so I will have to wait til the following weekend to fire it up. I use the term camping loosely because we aren't exactly roughing it in the trailer.

Yeah beef was crazy today at Costco, I finally found a butt on sale and swooped that up, I’ll be tossing that on the SF soon enough!

Yes. It's a rectangle shaped box/plate that restricts the flow into the box. The gap is adjusted by turning two bolts in or out. Not sure that makes sense so I'll take a photo of it. Everyone says not to change the gap from where Jamie sets it, to adjust the stack only for temp control. I had to take mine off for cleaning/painting so I'll have to reset it. The gap looked to be about a half inch.

That's what I thought I'd seen on the backyard Jambo. Its not a lot different from the Franklin, in that the Franklin has no damper and they've cut holes in the door that Aaron says they've calculated it to be the right amount of air flow.

When I picked it up last week I told myself that the jambo wasn't any harder to move around than my old country Pecos. After moving the Pecos today, that was a big lie I told myself! It will only be rolling from in my garage to the back patio which is about 15 feet so hopefully I can manage. So the paint is on! Had to go back to the store to get two more cans this afternoon. Six spray cans in total. I'm going to let it sit for the week then wash the inside on Sunday with some soap and water. Then dry, spray with cooking spray and light a small fire to season it up. And yes, my truck is parked on the lawn to act as a windbreak! Thanks again everyone. IMG_20211114_173305.jpg
 
Removed the old grate material from the frame for the firebox and tacked on a replacement. All that's left is putting the shelf back on. I'm getting excited! IMG_20211117_194629.jpg
 
That looks great, Gary! Looking forward to seeing it full of meat, and smoke rolling from the stack! :)

BTW, my Klose was very well made, but an exercise in frustration as I had no clue what I was doing! I think I could probably handle it much better with what I know now, but, well, pellet grills are easy! :)

Thanks Chuck, it's a nice spot. Especially now that the weather is getting tolerable.

I already had my first boner with it. Fire didn't want to burn, was smoldering unless I had the door open. After scratching my head for a while I realized I had the stack almost shut. Basically the lever on the stack is the opposite of the damper. So if the handle is at 6 o'clock, it's closed. I turned it to about 4 o'clock and it started purring right along. Lesson (hopefully) learned.
