Looks great. When are you dropping it off here. Ahh your weather is just starting to get better... hmm. I do not live in the bbq capital.
 
Well, ribs are done. Salt pepper garlic. Had to wrap for an hour to get them to finish for dinner. Added a little bit of lard to the wrap. They came out great. Still a little tight but the fat man had to eat! So far, I'm impressed with the pit. Definitely much easier to control then the Pecos. From what I understand Jambos mostly use the stack damper to control temp for whatever reason. That pit looks gorgeous! Ribs look great too!
