Overnight smoke of 18 pounds of bone-in Shoulder! When I placed the first one on the grate last night at 10pm the grate tilted, the pork slid into the water pan and the water pan tilted and a good portion of the water ended up below the fuel and some of it spilled out through a vent! I was not happy but soon realized very little H20 went onto the fuel. So I refilled the water pan, repositioned the grate, added some rub to the shoulder and went for it! Luckily only one corner of the pork got wet. I had no way of knowing how much water was underneath the fuel… But I just decided that at that point I had two water pans!
Fuel was all B&B...logs, lump and briquettes and a mixture of lump and briquettes for initial heat for minion She settled in nicely at around 230 and I went to bed!This was around 5am. Bark forming wellI took them off after 14 hours, wrapped in butcher paper and in the cooler.Really impressed with B&B. I had a full load but didn’t add any during the 14 hours and there was probably a few hours of fuel left when I shut her down!Haven't pulled it yet...still resting in cooler. Looking forward to the pulling process. Definitely not looking forward to the cleanup process! Cheers!Dis the mustard sauce from Trader Joe’s! Really good
