Near disaster on WSM! But lucked out on pork!

Overnight smoke of 18 pounds of bone-in Shoulder! When I placed the first one on the grate last night at 10pm the grate tilted, the pork slid into the water pan and the water pan tilted and a good portion of the water ended up below the fuel and some of it spilled out through a vent! I was not happy but soon realized very little H20 went onto the fuel. So I refilled the water pan, repositioned the grate, added some rub to the shoulder and went for it! Luckily only one corner of the pork got wet. I had no way of knowing how much water was underneath the fuel… But I just decided that at that point I had two water pans!

Great save and great cook. I gave B&B Briquettes a second try after getting two bags that I was not impressed with almost a year ago. I have been extremely impressed this go around. I fell like I must have got a bad batch last summer. I still want to try the B&B logs, but I haven't been able to find them around me yet. I started using the WSM with water and then when it got colder moved to waterless. I am not sure if I am going to go back water in the pan as it get warmer again.
 
Seeing a loaded grate start to tilt is one of those slow-motion moments...I'm glad it wasn't worse!
 
I love the shot of the bark and your plate shot is amazing perfect meal , I hope it tastes as good as it looks, I am jealous.
