Great job. Only thing I'd suggest is sometimes try smoking half slabs instead. It keeps the ends well away from the hot zone and just makes for a much more evenly cooked rack of ribs on the 18.5 wsm....especially if you have the room, anyway. They look great though, and I bet they tasted even better than they looked!

Sourwood honey is my favorite. My wife's aunt and uncle in NC had bees and that was their favorite. Thankfully, we have a local grocery store that carries it, but it's not cheap. Not good at describing things, but it's a honey that you can actually eat by the spoonful, all by itself..if that makes sense. It doesn't have the overpowering "honey" sweetness like clover or orange blossom.
 
Great looking ribbage!! For a split second I thought you were showing us some honey mead...shoot! Ribs looks great!
