Mashed Potatoes with Bacon, Jalapenos, Onion, Cream cheese......

I followed a smashed potatoes recipe from a new to me (kindle version) America's Test Kitchen cookbook a few days ago........the doubled recipe ran out way too soon, and I kept thinking you know what'd make this better?? Bacon! I've made some good german potato salad and decided to make it a little more to my liking :)


Red & Green Jalapenos on the grill, a chopped onion, & ~8 oz peppered bacon:

I tried to get the bacon crispy:

I pulled the stems off & tossed them in the mixer with the paddle bit, a half stick of butter, & an 8oz package of cream cheese (I can count the times I've bot cream cheese on one hand). I mixed it all up with only a small portion of the potatoes & let the beater beat the *?@! out of it, then I added the rest (total of 5 pounds baby red potatoes, scrubbed, with skins left on) of the potatoes....let it rip, & then put in the caramelized onion & the chopped bacon & let the dough hook spin it around:

Here it is on the plate - I'll be giving free advice on photos, lighting, & the other subtleties that can really make your plated pictures stand out :)

I like the line up for the potato salad very interesting. Looks delicious on the plate but not sure with the banana,
 
What stands out most of all Clint, is there's no steak along side the taters! "Just tugging your chain" my friend! Those potatoes are the next best thing to a loaded baker.Excellent photo work. Need to share some photo tips.Mine are to dark or washed out from the flash!
