This first ~1.8# piece came off after just about 4 hours...... there's a whole lot of goodness still finishing up.

I got this one and it's not a good fit out of the box - you know how you hear about people crimping the rim? I had to figure that out here (see the 2nd picture). I took a pair of channel locks & worked it for a few, then a rubber mallet, & then I got serious with the channel locks.

This is the pot I bought- try the other one if you can find it. I'd prefer stainless so I'll probably upgrade to that if I find one I know will work--but stainless will take a lot more effort to work with.

I don't have a fire ring yet but it's been ~310-325 for the last 4.75 hours on 2 mini-chimneys. I haven't compared the capacity of the mini chimney to the full-sized yet, it was just delivered today.
 
There's still one piece out there (the piece with the bone)----first came off @ 4 hours, the rest @ 4:45, the bone-in piece ?? pretty soon I'm sure.

Here's some enchiladas I made----did some pressure cooked pinto beans this morning before I took off for the day, along with some rice. I used a whole pound of pepper jack cheese on and inside these! Pretty good, maybe next time I'll try making my own green sauce, this stuff came out of a can.

I'm loving that closeup of the pork after pulling. Looks like the mini was a fun project which churns out great looking food.
 
Well done. I just finished my mini and I love that little thing. I've been running the heck out of it. So easy to use and mobile.

That reminds me - I picked up a 12" circular plate that's 3/16" thick for a heat diffuser ($14.00). I'm going to give it as much clearance as possible above the fire.... I'll post pics/details on how I secure it - I'm off to make a few stops right now, thanks for reminding me I need to get some hardware to work on this!

I thought I was seasoning it :)

.....naturally.....

...I really had no idea I was supposed to do anything before I cooked on it. That disc is coated in an oily/rusty residue from sitting in the outside stack, I'll scrub that clean & oil it before I used it. The aluminum steamer was really clean, I admit, I didn't even wash it before I used it.
