I had planned to smoke this fatty in my Mini-WSM but other things got in the way so I had to resort to using my gasser! Thought Id share anyways.
80/20 ground beef, homemade linguica sausage and rice. That's it. Keep in mind this isn't the finished dish the fatty is just a component in the final dish.

One of my ambient probes decided to kick the bucket. Or I've come up with a new Fire and Ice smoker!
