Left Over Pork Chop Enchiladas

I had about two cups of leftover pork chop so I decided enchiladas sounded good.

Here's what I used.







Indirect for 20 minutes.



Removed foil.



Topped with Panela and Colby Jack.



10 more minutes uncovered.



Plate with some shredded lettuce, diced Roma tomatoes and sour cream.



Delicious meal. Thanks for looking.

Wow Cliff, that's a different take on the old enchilada. Looks really good! Problem is, when you see Barbs thread you'll see there is no such thing as leftover pork chops around here. :rolleyes: Might sacrifice a chop or two and give that a try.
 
Cliff WOW!! I like that one a lot. I'll sacrifice a couple of chops to try this thanks for sharing. Have a great Thanksgiving.
 
Those enchiladas look great and you are a far braver man than I...I could never put my Pyrex on a grill!
