My cook of 40 Clove Chicken... after seeing John's post last Monday, i knew i had to try this.
And I thank John for his recipe help

Here is what i used. (not pictured is a shaker of poultry seasoning)
Chicken quarters, olive oil, kosher salt, fresh ground pepper, fresh rosemary and gaaaaalic of course.

placed everything in a 15" cast iron skillet over an intense grill

that will take a while, so i tossed on a few shrimpies

minutes later....

...they were gone.
about an hour later....

...the bird was cooked.

and served with oven roasted Yukon potatoes and butternut squash.
Some of the gaaaaalic was squeezed into the taters with butter

It was a very delicous dinner and I'll do this again! Thank you again John Solak!

Looks really tasty! One question, "over an intense grill" doesn't mean directly over the charcoal does it? Great looking plate of food as always!
