Labor Day Weekend Brisket 2018

Had this brisket in the freezer since last summer...

… and since brisket was all gone by the time I plated my food on Smoke Day 2018,
I decided to make another this weekend.

trimmed of excess fat, seasoned with salt & pepper then stored in the fridge until 3 am.

on the 22" WSM at 3:20 am Sunday morning.

The weather was not ideal.

I used a hinged plywood wind block to aide in the control of the temps...
(looks like daylight as lightning strikes as the photo was taken)

the internal temp reached 165ºF after only 6 hours...

...I then wrapped the brisket with
the magical pink butcher paper.

about 12:15pm Sunday, my
SMOKE
alarm sounded at 200ºF.
after a brief rest (4 hours), I sliced it and served dinner.
Lots of leftovers, something unheard of on Smoke Day 2018.

Way to gut it out Jim. That radar looks nasty, but the brisket looks wonderful. Love that bark. I love those long cooks too.

I like the weather report in the middle of the cook!
Most of the nastiest weather went north of me so, we just got some rain and a little lightshow with thunder! Big storm spawned tornadoes not too far north if us but, we were spared that!
I think I need to do a brisket pretty soon!
 
Beef in the P1gvillion? Sacre bleu! Looks like it saved your bacon... er... brisket. Brisket looks killer. The bark is amazing.
 
You are one tuff hombre Jim, 3am, rain, lighting, winds but the brisket must go on, amazing. That brisket looks killer and having leftovers makes it even better. We are still eating off the one we did on smoke day. I'm heating the point from it right now on the mini to make burnt ends for the first time.
Your HH baby back ribs will be done later this afternoon by Barb.
Me, I'll be in charge of making sure my beer doesn't get warm.:cool:
 
Looks perfect Jimmy, except for the weather.
WI has been on the news a lot lately with all the flooding in some areas.
 
Jim you did it again, one fantastic cook. Man that looks delicious, now all you have to do is send a plate this way.
