Kettle Smoked Saint Louie Ribs

Never seen StL style ribs ever in this area until yesterday. Today I bought a package.
Rubbed this rack with Blues Hog

On the 26" OTG with Grove hardwood coal good shtuff

did all that in the confines of the pigvilion

wasn't keepin' track of time, so not sure how long these guys were on...

...butt i picked them up with tongs and they almost broke.... so i sauced'um up

about 30 minutes later, they were removed from the grill, rested then sliced

You gotta nice rack there... No St Louis cut Spares in Chuck Eye Steak country huh. I see them around here from time to time but I prefer to cut my own from Spares 'cause I want to cook the trimmings along with dem bones for other dishes. Is the Blues Hog the competition winner it's made out to be? I've heard a lot about it but never used it.

Mike, Grove Coal is local, from Cedar Grove Wisconsin, however, I guess it's actually made in Canada according to what you may want to read...

and Dwain, i always buy the whole spare cut with brisket and all then smoke'm all up... butt when i saw the StL cut, thought, whyKnot.
Blues Hog rub is EXCELLENT!
however, it is NOT available in this area, so I mail order for it. If fact, I used the last of mine so it's time to Re-order:)
 
Great looking ribs!!! I see St. Louis ribs every now and again but they are twice the price of regular spares. No thanks.
 
That's some meaty bones, Jim. I used to trim myself all the time, but since we're not wild about the tips, we just get them at RD or last time, Costco. Nice pullback.

Never heard of it Jim. A lot of the Canadian stuff comes out of Quebec but there seems to be more coal around from the US and South America other than Maple Leaf.

Mr. Lampe as always an awesome cook but also, thanks for the education. The photo of the ribs sauced on the smoker, should be a screen saver. :)
