Kettle Pizza

It is with a heavy heart I am writing this post. I cooked a great dinner but my Ole Miss Rebels really blew it at LSU... You live to fight another day I guess!

I decided to try a pizza. I went to Trader Joes here in Dallas and picked up some fresh pizza dough. Did a little kneading and rolling to make a round pizza shape. I set up my 22.5 inch kettle to cook indirectly. I dumped a full chimney on charcoal in and arranged the coals around the outside of the kettle so I didn't have any charcoal directly under the pie (see pic). I put the dough on with no toppings for about 1 minute. Took it off and put my toppings on the slightly cooked side. I pre-cooked peppers, onions and mushrooms on a skillet. Pizza sauce, toppings, lots of mozzarella and a little bit of fresh Parmesan and stuck it on the grill again. I cooked on the grate no pizza stone. Left it on for roughly 5 minutes and was done! Next time I will use a little more sauce but it turned out great.

Nice pizza looks great! Barb and I have done a lot of pizzas with that process, just getting the bottom and soon to be the top slightly done keeps the dough from getting soggy on the top side if you us a fair amount of sauce. Last one we did I just put a few small pieces of apple wood and it gave the pie a real light smoke taste, really good.
 
Great looking pizza and its a great way to do it without using the stone. I think its about time for us to make some more, always like to have some on hand for those nights you don't want to cook!! Never used TJ's pizza dough before will have to try it, thanks for shareing.
 
Alright I couldn't help it. With a few left over ingredients made another Sunday night! Turned out better then the first one! Added pepperoni and put toppings on top of cheese.

And that's the secret to this fine pie! What do you use to rake your hot coals to the outside of your kettle? I've thought about getting a hoe and cutting the handle off so that there's only about two feet of handle to hoe

I have long tongs I use for touching hot charcoal. Only charcoal never meat! I store all my gear in my garage. When I cook on kettle or WSM I have a 5 gallon bucket I load my stuff in to take to the back yard. In my bucket I always bring my charcoal tongs, weber starter cubes, a few wood chunks I am going to use for that days cook and a pair of oven mits. When I light my charcoal in the starter I do my best to dump the charcoal around the sides of the kettle and then put on an oven mit and use the tongs to push the charcoal around the outside of the kettle. Never considered a hoe but it would def do the job. My trusty tongs do the trick as well! Pre cooking veggies is the way to go as well!
