As my recovery winds down( back to work on Friday. Ugh!), I've been doing a lot of cooking. Not a lot of pic taking,but a lot of cooking. Most of it grilling,yay! When I made burgers a couple weekends ago,I made extra ground beef "just in case!". Pammi said she wanted to make meatloaf out of it.
Now,we've been together 15 years. I've cooked many things for her,but never meatloaf! So I told her no,I'm making meatloaf for you! Took the ground beef I had and mixed it with some panko,chopped onions, salt and pepper ,an egg and some barbeque sauce. Formed it into a loaf and put it on some parchment paper and onto the kettle! 45 minutes later,we had this!

Served with mashed taters and some green beans,it was awesome! Even Pammi said it was good! High praise indeed!
