I have been promoting this recipe for quite some time now and noone seems to have made it even if it does get a lot of viewers..

Nope… I am older than 18. You NEVER PUT KETCHUP beyond that age. While I admit its a HD myth/stigma, my favorite junk food is HDs. I make home made ones a couple of times a year But no ketchup. Another way I like HDs is yellow mustard and Pepperoncini.
 
Raised in the 'burbs of Chicago and know Chicago dogs really well and that dog of yours is a fine looking dog... even with the substitution (y)
My son went to college in Chicago and managed a restaurant until it closed because of Covid. I fell in love with Chicago Dogs the first time I ate one.

Well, it sure looks good, but I'm afraid that I would still run a line of ketchup over it, and I'm well over 18 ;). I've honestly never heard of a hot dog without ketchup on it, but eat it however you like and enjoy. (y)
 
I’ve seen people put mayo on pulled pork, ketchup on brisket, tomato juice in beer, and mix Diet Coke with good bourbon.
Takes me back a bit but I get over it.
Best fries I’ve ever eaten were Thrasher’s at Ocean City, Maryland. You either eat them plain, with vinegar, or supply your own ketchup.
 
I made the mistake of checking out the recipes in my hot dog binder. I found so many different ways to eat hot dogs, I am going crazy. Since a lot of you have already talked about Chicago dogs, I think I should post a few from other parts of the U.S.

Not a huge fan of Thrashers, but there is a food place basically diagonally across the boardwalk called Atlantic that does their hot dogs split down the middle and fried, served flat on a roll, one of my favorites.

Baltimore Dog

Brush 2 onions, sliced 1/2" thick, with olive oil. For a charcoal grill, place sliced onions on the grill rack directly over medium coals. Grill, uncovered, about 2 minutes or until browned, turning once. (For a gas grill, preheat grill. Reduce heat to medium. Place onions on grill rack. Cover and grill as above.). In a large heavy skillet, heat 1/2" oil over medium high heat until a drop of water sizzles in oil. Reduce heat. Split hot dogs lengthwise halfway through. Cook, uncovered, for 4 to 7 minutes. Drain on paper towels. Place hot dogs in buns and immediately top with cheddar cheese slices and grilled onion rings.
 
Rich, the only one for Arizona is this.

Named for the area's famed desert, the Sonoran hot dog is a beef frank wrapped in bacon, then cooked on a griddle and piled with pinto beans, grilled onions, chopped tomatoes, mayonnaise or sour cream, mustard and salsa verde (tomatillo salsa).

The tradition is locally made Wisconsin brats (bratwurst to those outside Heaven)…

so…. Tradition wins.

I don't know what is in them, but they look so colorful. No wonder they are called California Hot Dogs.

They don't serve them with onion or cheese that I'm aware of, although that may be available in the condiments, but the cut sounds about right, though I believe that they are cooked on a griddle. Nothing fancy, but real good, and a local staple. I haven't been down there in years, assuming that they're still there. Here's a pic, and it looks like that might be cheese coming out of the side afterall:

I believe Dirty Harry said: "Nobody, but nobody eats ketchup on a hotdog". 😉😂
