Jamaican style jerk pork.

I did this a few years back, its from Stephen Raichlens book "Planet barbecue", its jerk pork cooked over pimento wood sticks, i've done it a couple times since, its wonderful, I use Walkerswood for sesoning instead of the called for seasoning, Pimento is great wood for smoking, you can get it here.http://www.shop.pimentowood.com/

Never seen that before. A really small sized pic...But you are cooking the pork on the wood sticks..."indirect"?(thank good for firefox ctrl+mouse scroll zoom thingy) ;)

I wanna know more about rub/marinade for the pork.
 
It is indirect Wolgast, its the same style they use in Jamaica at the "Jerk Centres" that you find on the island, as for the Walkerswood, look in the photo gallery for the "jamaican jerk chicken" post.
 
Mike, did you find the Walkerswood locally, or did you have to order it?
I get it at Guy-am grocery in North Minneapolis, I know its not the best neighborhood but this place is right off North Lyndale by I-94, otherwise I've seen it at Kowalskis and Byerlys and some smaller butcher shops and delis, theres also a new store in the MOA on the 2nd floor that carries it and endless kinds of hot sauce.
