Jamaican Jerk Wings

I have been having a taste for some some jerk chicken wings. I marinated the wings over night with some Walkerswood Jamaican Jerk seasoning. It is actually a paste and not a dry seasoning.



I wasn't making very many so I decided to use my little Weber Smokey Joe to grill these. I started with about 12 lit coals and two small chunks of apple wood.



I let the wings smoke slowly for close to an hour. I added more charcoal to add heat and then spread the coals so I could grill them direct to crisp up the skin.



After about 15 minutes, the internal temp was measuring at 165. I pulled them off and let them rest.



The taste was really nice and smokey. My wife and oldest daughter enjoyed them as did I. If you haven't tried the Walkerswood seasoning, you should!

My wife and I were just talking about doing Jerk wings. Those look great! Did you make a dipping sauce to go with them?
